Eggplant parmesan is a healthy and delicious dish. Based on vegetables and cheese, it’s a great choice when you want a vegetarian meal. Making it can seem difficult, but it’s really quite simple. Prepare to impress your family with this delightful dish that might just become one of their favorites.
Olive oil or parchment paper
Two large eggs
¾ cup breadcrumbs
¾ cup parmesan, plus two tablespoons for topping
1 teaspoon oregano
½ teaspoon dried basil
Salt and pepper
Two large eggplants, peeled and cut into ½-inch rounds
6 cups of tomato sauce, homemade or store-bought
1 and ½-cups of shredded mozzarella
Preparing the Eggplant
Preheating the oven to 375 degrees. Whisk the eggs in a shallow dish. In another shallow dish, combine breadcrumbs, an equal amount of parmesan cheese, basil and oregano. You can also add some salt and pepper to this mixture.
Dip the dry eggplant slices in the egg, let the excess drip off, and then pull them through the breadcrumb mixture to coat them. Set each slice on the lined or oiled baking sheet as you work. With all slices breaded, bake them in the oven for 20 to 25 minutes. Turn them once and then bake them a little longer.
Making the Dish
Remove the eggplant and raise the temperature to 400 degrees. Use a 9-by 13-inch backing dish for the eggplant parmesan. Put half the eggplant in the bottom of the dish, cover it with two cups of sauce and a half-cup of mozzarella cheese. Repeat the pattern, and sprinkle with two tablespoons of parmesan.
Bake until the cheese is melted and the sauce is bubbling. It should only take 15 to 20 minutes, and then the meal will be ready for your family to enjoy.
